So here is my attempt to smoke chicken and pork spare ribs smoke. Both turned out great! The cooking time has taken longer than expected. I tried again for about an hour per pound, but it turns out to be closer to 1 hour and 20 minutes per pound. Really just look at the temperatures on the meat, to tell you when they are ready.
